Easy Going Carrot Soup

2 bunchs of OG Carrots Chopped
1 Tbsp Coconut Oil
1 Tbsp Fresh Minced Ginger
1 can of OG Coconut Milk
3 cups Water
Mustard Seeds, Cumin Seeds, Turmeric, Celtic Sea Salt , Cumin Powder to your tastes.


In a soup pot place coconut oil and seeds,let them pop. Then add rest of seasoning , carrots and saute lightly for a few minutes. Add water and bring to a boil. Then cover and lower to a simmer.
This pairs nicely with brown basmati or simply by itself for easy digestion. I rinse but do not peel OG Carrots for extra vitamins and nourishment.
