Tapioca Coconut Mango Pudding

Here is a recipe I mentioned briefly at the Winter Sadhanas workshop Friday night. Enjoy! Hope you all had a restful weekend.

Tapioca Pudding

3 cups of Organic Coconut Milk
1/4 cup Organic Tapioca Granules " Lets Go Organic Brand"
1 Ripe Mango
Vanilla Bean Crushed Optional

In  a saucepan bring coconut milk  to a boil and then quickly turn down to low and add the tapioca. Simmer for 12-15 minutes and stirring. When the tapioca is transparent and thickens remove from stove top. Add crushed vanilla, and slices of ripe juicy mango. Sweetener is optional

    Does it matter if you use coconut milk from a can or a carton??

    Yes it makes a difference. I suggest using the canned Native Organics coconut Milk.
